After a fun filled day of cross fit in the morning, hiking in the afternoon and a motorcycle ride in the evening, I decided I needed to get back to baking! So thank you Katie from Chocolate Covered Katie for this wonderful recipe!!! So Healthy and so yummy!
- 1/2 cup rolled oats
- 1 mashed banana
- 1/4 cup roasted cashew butter
- 1/2 tsp pure vanilla extract
- 1-2 tbsp mini chocolate chips or Cocoa powder
- 1 tbsp dried fruit (You pick your favorite!)
Preheat the oven to 350 degrees. Mash the banana with the nut butter, then add all other ingredients and mix until well-combined. Shape into cookies and bake on a greased cookie sheet for around 14-16 minutes, then let cool 10 minutes before removing from sheet.
