Elf4Health- Frozen Yogurt Trail Mix Bars

I’ve talked about my Elf4Health challenges on here quite a few times. It was an amazing month of pursuing a healthy lifestyle. Now when i say healthy lifestyle I don’t just mean healthy eating. We had challenges that ranged from, have as many vegetables as you can at each meal to pay it forward and do something nice for someone you don’t know, ie: buy them a coffee. It was a great process and definitely something I’d love to do again. The girl that put this together has an awesome blog “The Lean Green Been” which has some recipes on it as well. She posted the recipe I am about to give you, and I was so anxious to try it. These bars are amazing, so I can take no credit for them…she deserves it all. Ingredients:

  • 2 cups greek yogurt (I use 2 cups 2% Fage plain)20130103_145151
  • 1 1/2 c chopped fruit (I use strawberries black berries and blue berries)20130103_145954
  • 1/2 c chopped nuts (I use almonds)20130103_145434
  • 3/4 c granola (try to use the granola that has the least amount of sugar)20130103_145348

Instructions:

  1. Mix all ingredients in a bowl.20130103_150055
  2. Line a pan with foil.20130103_150225
  3. Spread yogurt mixture into pan.20130103_150404
  4. Cover with plastic wrap and place in freezer until frozen.20130103_150446
  5. Remove from freezer, let thaw for 5 minutes, cut into bars.IMG_20130104_171928
  6. Store in an airtight container in the freezer.
